December Freezer Dump High Protein

December Freezer Dump High Protein

  • Total Time: 6 hours 15 minutes
  • Diet: Gluten-Free, High Protein

Ingredients

Scale
  • 3 lbs Boneless, skinless chicken breasts
  • 1 cup Fresh or frozen cranberries
  • 1 large Red onion, sliced
  • 4 cloves Garlic, minced
  • 1/4 cup Balsamic vinegar
  • 2 tbsp Honey or maple syrup
  • 1 tbsp Fresh rosemary, chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Chicken bone broth (added on cooking day)

Instructions

  1. Label a gallon-sized freezer bag with the recipe name and date. Place the chicken breasts into the bag. Add the cranberries, sliced red onion, minced garlic, balsamic vinegar, honey, rosemary, salt, and pepper. Squeeze as much air out of the bag as possible before sealing it tightly. Massage the bag slightly to ensure the marinade coats all the chicken pieces.
  2. Lay the freezer bag flat in your freezer. This helps the meal freeze quickly and makes it easier to stack other freezer meals on top. You can store this December Freezer Dump High Protein meal for up to three months. When you are ready to cook, it is best to thaw the bag in the refrigerator overnight, but you can also cook it directly from frozen if needed.
  3. Empty the contents of the freezer bag into your slow cooker. Add the 1/2 cup of chicken bone broth to provide extra moisture and protein. Cover and cook on “Low” for 5 to 6 hours or on “High” for 3 to 4 hours. The chicken should be tender and reach an internal temperature of 165°F. Once cooked, shred the chicken slightly with two forks to let it soak up the balsamic cranberry juices.
  4. Serve the chicken warm over a bed of roasted vegetables, cauliflower rice, or quinoa for a complete high-protein meal. Garnish with an extra sprig of fresh rosemary or a sprinkle of orange zest to give it a truly festive look. Drizzle the remaining juices from the slow cooker over the top for maximum flavor.
