Dump And Bake Sheet Pan Breakfast Burritos With Sausage And Eggs

  • Total Time: 40 minutes
  • Diet: High-Protein

Ingredients

Scale
  • 8 large flour tortillas (burrito size)
  • 1 lb ground breakfast sausage (mild or hot)
  • 10 large eggs
  • 1/2 cup whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 red bell pepper, finely diced
  • 1/2 small yellow onion, finely diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Non-stick cooking spray or melted butter
  • Optional: Salsa and sour cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a large rimmed baking sheet with non-stick cooking spray or line it with parchment paper to ensure easy cleanup. If you are using raw sausage, brown it in a skillet over medium heat until fully cooked, then drain the excess grease. If you are using pre-cooked sausage crumbles, you can skip the skillet and move directly to the “dumping” phase.
  2. In a large mixing bowl, crack the 10 eggs and whisk them together with the milk, garlic powder, onion powder, salt, and pepper. Whisk vigorously until the mixture is pale yellow and slightly frothy. Stir in the diced bell peppers and onions. This ensures the vegetables are evenly distributed throughout the egg mixture before it hits the pan.
  3. Pour the egg and vegetable mixture onto the prepared sheet pan. Carefully sprinkle the cooked sausage evenly over the eggs. Place the pan in the center rack of the oven and bake for 12 to 15 minutes, or until the eggs are just set and no longer liquid in the center. Remove the pan from the oven and immediately sprinkle the shredded cheddar cheese over the hot eggs, allowing it to melt.
  4. Let the egg sheet cool for 2 minutes, then slice it into 8 equal rectangles. Place one egg rectangle in the center of each flour tortilla. Fold in the sides and roll tightly to form a burrito. For an extra touch, place the rolled burritos back on the sheet pan, seam-side down. Lightly brush the tops with melted butter or spray with cooking oil and bake for an additional 5-7 minutes until the tortillas are golden brown and slightly crisp.
  5. Remove the burritos from the oven and let them sit for a minute to settle. Serve hot with a side of salsa, sliced avocado, or a dollop of sour cream. If you are meal prepping, allow them to cool completely before wrapping them individually in foil or plastic wrap.
