Ingredients
Scale
- 2 lbs Ground Turkey (or lean Ground Beef)
- 2 cans (15 oz each) Black Beans, drained and rinsed
- 2 cans (15 oz each) Kidney Beans, drained and rinsed
- 2 cans (14.5 oz each) Diced Tomatoes with Green Chilies
- 1 bag (12 oz) Frozen Sweet Corn
- 1 carton (32 oz) Low-Sodium Chicken Broth
- 2 packets Taco Seasoning
- 1 packet Ranch Dressing Mix (dry)
- Optional: Shredded cheese, sour cream, and tortilla chips for serving
Instructions
- Place the raw ground turkey or beef directly into the bottom of your 6-quart or larger crockpot. Break the meat into smaller chunks using a wooden spoon. Pour the drained black beans, kidney beans, and frozen corn over the top of the meat. Add the diced tomatoes with green chilies, including the liquid from the cans, to provide extra flavor and moisture.
- Sprinkle both packets of taco seasoning and the single packet of dry ranch dressing mix over the top of the meat and vegetables. Pour the entire carton of chicken broth into the crockpot. Stir the mixture gently to ensure the seasoning is distributed throughout the liquid, though the meat will remain mostly at the bottom for the best cook.
- Cover the crockpot with its lid. Set the temperature to “High” for 4 hours or “Low” for 7 to 8 hours. About halfway through the cooking process, use a sturdy spoon or a meat masher to break the ground meat into fine crumbles. Stir the soup thoroughly to combine all the flavors. The meat will cook perfectly in the seasoned broth, soaking up the spices as it browns.
- Once the timer is up, give the soup a final stir. Taste the broth and add a pinch of salt or pepper if desired. Turn the crockpot to the “Warm” setting so guests can serve themselves throughout the game. Ladle the hot soup into bowls and let everyone customize their dish with toppings like shredded cheddar, a dollop of sour cream, or crushed tortilla chips.
- Cook Time: 4 hours 5 minutes
