Ingredients
Scale
- 1.5 lbs Lean Ground Turkey (93/7) or Ground Chicken
- 1 bag (19 oz) Frozen Cheese Tortellini
- 4 cups Low-Sodium Chicken Broth
- 1 can (15 oz) Crushed Tomatoes
- 2 cups Fresh Baby Spinach
- 1 cup Non-fat Plain Greek Yogurt (for creaminess and protein)
- 2 tbsp Italian Seasoning
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- Salt and Pepper to taste
- Optional: Red pepper flakes for a kick
Instructions
- Place the raw lean ground turkey or chicken into the bottom of your slow cooker. Break it up slightly with a wooden spoon. Pour in the chicken broth, crushed tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper. If you like a little heat for game day, sprinkle in some red pepper flakes now. Stir the liquid briefly to distribute the spices around the meat.
- Cover the slow cooker with its lid. Set the temperature to “Low” for 6 to 7 hours or “High” for 3.5 to 4 hours. This is the “walk” part of the recipe—go enjoy the pre-game show or run your errands. The meat will cook through perfectly in the liquid, absorbing all those savory herb flavors while staying tender.
- About 20 minutes before you are ready to eat, remove the lid and use a spoon to break the cooked ground meat into small crumbles. Stir in the frozen cheese tortellini and the fresh baby spinach. Replace the lid and cook for another 15 to 20 minutes until the tortellini is tender. Finally, stir in the non-fat Greek yogurt. The yogurt provides a rich, creamy texture and a massive protein boost without the heavy fat of heavy cream. Serve immediately in large bowls.
- Cook Time: 4 hours 5 minutes
