Ingredients
Scale
- 1 lb Lean Ground Beef (85% to 90% lean works best)
- 1 tablespoon Olive Oil
- 2 tablespoons Taco Seasoning (store-bought or homemade)
- 1/2 cup Water or Beef Broth
- 8 Small Flour or Corn Tortillas
- 1 cup Shredded Lettuce
- 1 cup Shredded Cheddar or Mexican Blend Cheese
- 1/2 cup Diced Tomatoes
- Optional: Sour cream, sliced jalapeños, fresh cilantro, and lime wedges
Instructions
- Step 1: Preparation. Begin by dicing your tomatoes and shredding the lettuce. Set your toppings aside in small bowls to create a “taco bar” feel. If you are using corn tortillas, wrap them in a damp paper towel and microwave for 30 seconds, or lightly toast them over a gas flame for a smoky flavor.
- Step 2: Browning the Beef. Place a large skillet over medium-high heat and add the olive oil. Once the oil shimmers, add the ground beef. Use a wooden spoon or a meat masher to break the beef into small crumbles as it cooks. Sauté for about 5 to 7 minutes until the meat is completely browned and no pink remains. Carefully drain any excess grease from the pan.
- Step 3: Seasoning and Simmering. Lower the heat to medium. Sprinkle the taco seasoning evenly over the browned beef. Pour in the water or beef broth and stir well to combine. Let the mixture simmer for 3 to 5 minutes. This step is crucial as it allows the liquid to reduce, creating a thick, flavorful sauce that coats the meat perfectly.
- Step 4: Plating. Spoon a generous portion of the seasoned beef into the center of each warmed tortilla. Immediately top with the shredded cheese so it begins to melt from the heat of the meat. Add the lettuce, tomatoes, and any other desired garnishes. Serve immediately with a squeeze of fresh lime juice.
- Cook Time: 20 minutes
