Ingredients
Scale
- 1 slice of sprouted grain or high-protein whole-wheat bread
- 1/2 cup low-fat cottage cheese, 1/4 sliced avocado, red pepper flakes, and a pinch of sea salt (Variation 1)
- 1/2 cup plain non-fat Greek yogurt, 1/4 cup blueberries, 1 tsp chia seeds, and a drizzle of sugar-free honey or maple syrup (Variation 2)
- 2 tbsp light cream cheese (or blended cottage cheese), 2 oz smoked salmon, fresh dill, and capers (Variation 3)
- 1 tbsp almond butter, 1/2 small banana (sliced), 1 tbsp hemp hearts, and a dash of cinnamon (Variation 4)
Instructions
- Toasting the Base: Place your chosen slice of high-protein or sprouted grain bread into the toaster. Set it to your desired level of crispness. A firmer toast works better for heavier toppings like cottage cheese or avocado. If you are making this ahead, let the toast cool completely before adding toppings to prevent sogging, or store the toppings separately in small containers.
- Spreading the Protein: Apply your primary protein layer generously across the surface of the warm toast. For the Savory Powerhouse, spread the cottage cheese evenly. For the Sweet Berry Burst, use the thick Greek yogurt. Ensure the spread reaches the edges so every bite contains a high dose of protein. If you are using cottage cheese and prefer a smoother texture, blend it in a food processor beforehand.
- Garnishing and Serving: Layer your chosen fruits, vegetables, or seeds on top of the protein base. Sprinkle your seasonings, such as red pepper flakes, cinnamon, or hemp hearts, over the top. Serve immediately while the bread is still crisp and the toppings are fresh. If you are taking this to go, pack the toppings in a small airtight container and assemble the toast right before eating at your desk or gym.
- Cook Time: 5 minutes
