Ingredients
Scale
- 2 cups low-fat or whole-milk cottage cheese
- 6 large eggs
- 1/2 cup shredded sharp cheddar cheese
- 2 cups fresh baby spinach, chopped
- 1/2 cup cooked turkey sausage or bacon bits
- 1/4 cup green onions, sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Non-stick cooking spray
Instructions
- Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish or a standard muffin tin with non-stick cooking spray. In a large mixing bowl, whisk the six eggs until the yolks and whites are fully combined. Stir in the cottage cheese, garlic powder, smoked paprika, salt, and pepper. Mix well until the spices are evenly distributed throughout the liquid base.
- Fold the chopped spinach, cooked turkey sausage (or bacon), and half of the shredded cheddar cheese into the egg mixture. Stir gently to ensure the fillings are submerged. Pour the entire mixture into your prepared baking dish. Sprinkle the remaining cheddar cheese and the sliced green onions over the top to create a golden, flavorful crust during the baking process.
- Place the dish in the center rack of the oven. Bake for 30 to 35 minutes, or until the center is set and the edges are lightly golden brown. If you are using a muffin tin, reduce the baking time to 20-22 minutes. Remove from the oven and let it sit for 5 minutes before slicing. This rest period allows the cottage cheese to set completely, ensuring clean slices for your meal prep containers.
- Cook Time: 45 minutes
