Ingredients
Scale
- 2 lbs Chicken breast, cut into bite-sized cubes
- 1.5 cups Low-fat cottage cheese
- 1/2 cup Low-sodium chicken broth
- 3 cloves Garlic, minced
- 1 tablespoon Olive oil
- 1 teaspoon Smoked paprika
- 1 teaspoon Dried oregano
- 1/2 teaspoon Red pepper flakes (optional)
- 2 cups Fresh broccoli florets
- 1 medium Zucchini, sliced into half-moons
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Start by placing the cottage cheese and chicken broth into a high-speed blender or food processor. Blend on high until the mixture is completely smooth and no curds remain. This creates your “cream” base. Set this aside. Next, pat your chicken breast cubes dry with paper towels and season them generously with salt, pepper, smoked paprika, and dried oregano. This ensuring the seasoning sticks and the chicken sears properly.
- Heat the olive oil in a large non-stick skillet over medium-high heat. Once the pan is hot, add the chicken cubes in a single layer. Sear the chicken for 5–7 minutes, turning occasionally, until all sides are golden brown and the internal temperature reaches 165°F (74°C). Remove the chicken from the pan and set it aside on a plate. Do not wipe the pan out, as those brown bits carry a ton of flavor.
- In the same skillet, add the broccoli florets and zucchini slices. Sauté for 4–5 minutes until they are tender-crisp. Add the minced garlic and red pepper flakes, cooking for another 30 seconds until fragrant. Lower the heat to medium-low and pour in the blended cottage cheese mixture. Stir constantly for 2 minutes as the sauce warms through and thickens slightly. Return the cooked chicken to the pan, tossing everything together until the chicken and vegetables are thoroughly coated in the creamy sauce.
- Divide the mixture equally into four meal prep containers. If you are eating immediately, garnish with fresh parsley. For meal prep, allow the food to cool slightly before sealing the lids. This prevents excessive steam from making the vegetables mushy during storage.
- Cook Time: 35 minutes
