Ingredients
Scale
- 1 cup low-fat or 2% cottage cheese
- 1/4 cup fresh blueberries or sliced strawberries
- 1 tablespoon hemp hearts (adds 3g protein)
- 1 tablespoon sliced almonds or crushed walnuts
- 1/2 teaspoon ground cinnamon
- 1 teaspoon honey or maple syrup (optional)
- 1/4 cup high-protein granola (optional for extra crunch)
Instructions
- Measure out one cup of your favorite cottage cheese. If you prefer a smoother, yogurt-like consistency, place the cottage cheese in a small food processor or blender and pulse for 30 seconds. This creates a “whipped” texture that feels more like a decadent mousse than traditional curds. Transfer the base into a serving bowl or a portable glass jar if you are prepping for later.
- Sprinkle the ground cinnamon directly over the cottage cheese and stir gently to incorporate the warmth throughout the base. Top the mixture with your fresh berries, hemp hearts, and nuts. The hemp hearts are the “secret ingredient” here, as they add significant protein and healthy fats without changing the flavor profile. Drizzle your sweetener of choice over the top if you prefer a sweeter breakfast.
- If eating immediately, garnish with a few extra berries and enjoy. For meal prep, secure the lid on your glass jar and store it in the refrigerator for up to four days. If you are using granola, keep it in a separate small container or baggie and add it right before eating to ensure it stays crunchy and doesn’t get soggy in the fridge.
- Cook Time: 5 minutes
