Ingredients
Scale
- 1/2 cup low-fat or full-fat cottage cheese
- 2 large eggs
- 1/2 cup rolled oats (or oat flour)
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 teaspoon maple syrup or honey (optional)
- A pinch of cinnamon
- Coconut oil or butter for the pan
Instructions
- Step 1: Blend the Batter. Place the cottage cheese, eggs, oats, baking powder, vanilla extract, and cinnamon into a high-speed blender. Blend on high for about 30 to 45 seconds until the mixture is completely smooth. If you prefer a bit of texture, you can pulse the ingredients instead, but a smooth batter yields the fluffiest results. Let the batter sit for 2 minutes while your pan heats up; this allows the oats to hydrate and thicken the mixture.
- Step 2: Cook to Golden Perfection. Heat a non-stick skillet or griddle over medium-low heat. Add a small amount of coconut oil or butter to coat the surface. Pour about 2-3 tablespoons of batter for each pancake onto the hot skillet. Do not make them too large, as these pancakes are more delicate than flour-based ones. Cook for 2-3 minutes until small bubbles form on the surface and the edges look set. Carefully flip each pancake and cook for another 1-2 minutes until golden brown on both sides.
- Step 3: Plating and Serving. Transfer the warm pancakes to a plate. Stack them high and top with your favorite healthy additions. Fresh berries, a dollop of Greek yogurt, or a drizzle of almond butter works perfectly. Serve immediately while they are warm and light.
