Ingredients
Scale
- 1 cup low-fat or 2% cottage cheese (small curd works best)
- 1 scoop (approx. 30g) of your favorite vanilla or chocolate whey/casein protein powder
- 1/2 cup fresh or frozen berries (blueberries, raspberries, or sliced strawberries)
- Optional: A splash of unsweetened almond milk if you prefer a thinner consistency
Instructions
- Step 1: Blend or Whip – Place the cottage cheese into a small food processor or a high-speed blender. Pulse for 30 to 60 seconds until the texture is completely smooth and creamy. If you prefer a more traditional cottage cheese texture with curds, you can skip the blending and simply place the cheese in a medium-sized mixing bowl.
- Step 2: Incorporate Protein – Add the scoop of protein powder directly to the blended cottage cheese. Use a spatula or a sturdy spoon to fold the powder into the cheese until no dry clumps remain. If the mixture feels too thick or “chalky,” add one tablespoon of almond milk at a time until you reach your desired pudding-like consistency.
- Step 3: Assemble and Top – Transfer the mixture into a serving bowl. Top with the fresh or frozen berries. You can eat this immediately, or for the best experience, let it chill in the refrigerator for about 15 minutes. This allows the protein powder to fully hydrate, resulting in an even smoother, more dessert-like texture.
