Ingredients
Scale
- 1 cup Low-fat or 2% Cottage Cheese
- 2 tablespoons Unsweetened Cocoa Powder (or 1 scoop of your favorite protein powder)
- 1 tablespoon Liquid Monk Fruit sweetener or Stevia (adjust to taste)
- Optional: A splash of vanilla extract or a pinch of sea salt
Instructions
- Place the cottage cheese into a high-speed blender or food processor. If you want the smoothest texture possible, ensure the cottage cheese is cold right from the fridge. Pulse the blender on high for about 30 to 60 seconds. You are looking for a completely smooth, liquid consistency with absolutely no lumps or curds remaining.
- Add the unsweetened cocoa powder and your choice of liquid sweetener to the blender. If you are using protein powder instead of cocoa, add it now. Blend again on a low setting until the color is uniform and the powder is fully incorporated. Scrape down the sides of the blender with a spatula to make sure no dry pockets remain. Taste the mixture and add more sweetener if you prefer a more dessert-like flavor.
- Transfer the mixture into a small bowl or a glass meal-prep jar. While you can eat it immediately, the texture improves significantly if you let it sit. Place the container in the refrigerator for at least 30 minutes. This allowing the flavors to meld and the mousse to thicken into a fudge-like consistency. Top with a few berries or a sprinkle of dark chocolate chips before serving.
- Cook Time: 5 minutes
