High Protein Desserts Donuts Cottage Cheese 3 Ingredient 20g+ Easy Low Carb Meal Prep

  • Total Time: 20 minutes
  • Diet: Low-Carb, Gluten-Free

Ingredients

Scale
  • 1/2 cup Low-fat cottage cheese (blended until smooth)
  • 1 Large egg
  • 1 scoop (approx. 30g) Vanilla or chocolate whey protein powder (or oat flour for a different texture)
  • Optional: 1/2 tsp Baking powder (for extra fluffiness)
  • Optional: Liquid stevia or monk fruit sweetener to taste

Instructions

  1. Start by preheating your oven to 350°F (175°C) or your air fryer to 320°F. Grease a silicone donut mold with a light coating of coconut oil or non-stick cooking spray. In a high-speed blender or food processor, combine the cottage cheese, egg, and protein powder. Blend on high until the mixture is completely smooth and no curds remain. If the batter feels too thick, add a teaspoon of water or almond milk; if it is too runny, add another tablespoon of protein powder.
  2. Carefully pour or pipe the batter into the prepared donut molds, filling them about three-quarters of the way to allow for rising. If using an oven, bake for 12-15 minutes. If using an air fryer, cook for 8-10 minutes. The donuts are done when they are firm to the touch and a toothpick inserted into the center comes out clean. Avoid overcooking, as protein powder can become dry if left in the heat for too long.
  3. Allow the donuts to cool in the mold for at least 5 minutes before popping them out. This prevents them from breaking. Once cooled, you can enjoy them plain or add a quick glaze. A simple high-protein glaze can be made by mixing a tablespoon of Greek yogurt with a teaspoon of cocoa powder or powdered monk fruit. Serve immediately or pack them into airtight containers for your weekly meal prep.
