Ingredients
Scale
- 1/2 cup low-fat cottage cheese (blended until smooth)
- 1 large egg (or 1/4 cup liquid egg whites for lower fat)
- 1 scoop (approx 30g) vanilla whey or casein protein powder
- 2 tablespoons almond flour
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon granulated monk fruit or stevia
- Optional: Cinnamon or sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a silicone donut pan with non-stick cooking spray. Place the cottage cheese into a small blender or food processor and pulse until it reaches a completely smooth, creamy consistency.
- In a medium mixing bowl, whisk the blended cottage cheese with the egg, vanilla extract, and sweetener. Once combined, gently fold in the protein powder, almond flour, and baking powder. Stir until just combined, being careful not to overmix. If you want chocolate chips or cinnamon, fold them in now.
- Spoon the batter evenly into the prepared donut cavities. Do not overfill them, as they will rise slightly. Place the pan in the center rack of the oven and bake for 12 to 15 minutes. You will know they are done when the edges are golden brown and a toothpick inserted into the center comes out clean. If using an air fryer, cook at 325°F for 8 to 10 minutes.
- Allow the donuts to cool in the pan for at least 5 minutes before attempting to remove them. Once cooled, you can top them with a simple glaze made of a little extra protein powder and a splash of almond milk, or enjoy them plain for a low-calorie treat.
