Ingredients
Scale
- 2 slices of thick-cut whole grain or brioche bread
- 1/2 cup low-fat or full-fat cottage cheese
- 2 large eggs
- Optional: Cinnamon, vanilla extract, or a splash of maple syrup for extra flavor
Instructions
- Step 1: Blend the Batter
Place the cottage cheese and eggs into a small blender or food processor. Blend on high for about 15 to 20 seconds until the mixture is completely smooth and no curds remain. If you prefer a more rustic texture, you can whisk them by hand in a shallow bowl, but blending creates that signature silky custard. If you are using cinnamon or vanilla, add them to the blender now. - Step 2: Soak and Sizzle
Pour the blended mixture into a shallow dish. Dip each slice of bread into the liquid, letting it soak for about 30 seconds on each side so the center becomes moist. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or a small pat of butter. Place the soaked bread in the pan and cook for 3 to 4 minutes per side. You want a deep golden brown crust and a firm center. - Step 3: Plating
Transfer the golden-brown French toast to a plate. If you have any leftover batter in the dish, you can scramble it quickly in the pan for a side of “sweet eggs” or pour it over the toast while cooking. Top your French toast with fresh berries, a drizzle of honey, or a dollop of Greek yogurt for even more protein.
