Ingredients
Scale
- 2 thick slices of whole-grain bread or sourdough
- 1/2 cup low-fat cottage cheese
- 1 large egg (or 1/4 cup egg whites for extra protein)
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon maple syrup or stevia (optional)
- Pinch of salt
- Cooking spray or 1/2 teaspoon butter
Instructions
- Add the cottage cheese, egg, cinnamon, vanilla extract, sweetener, and salt into a high-speed blender. Blend for 20-30 seconds until the mixture is completely smooth and looks like a thick custard. Pour the mixture into a shallow bowl or wide-bottomed dish that can fit your bread slices.
- Preheat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or butter. Place each slice of bread into the cottage cheese mixture. Let it soak for about 30-45 seconds on each side, ensuring the bread absorbs the liquid but doesn’t fall apart. Place the soaked bread onto the hot skillet. Cook for 3-4 minutes per side until golden brown and slightly crisp.
- Stack the warm French toast slices on a plate. Top with fresh berries, a dollop of Greek yogurt, or a drizzle of sugar-free syrup. Serve immediately while hot and the edges are still crispy.
- Cook Time: 15 minutes
