Ingredients
Scale
- 8 large eggs
- 2 cups low-fat or 2% cottage cheese
- 1 cup cooked turkey sausage crumbles or diced ham
- 2 cups fresh baby spinach, chopped
- 1 medium bell pepper, finely diced
- 1/2 cup shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- Optional: Green onions or red pepper flakes for garnish
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9 inch baking dish with non-stick cooking spray or olive oil. Chop your spinach and dice the bell peppers into small, uniform pieces. If you are using turkey sausage, ensure it is fully cooked and drained of any excess fat before adding it to the mix.
- In a large mixing bowl, crack the 8 eggs and whisk them thoroughly until the yolks and whites are fully combined. Stir in the cottage cheese, garlic powder, onion powder, salt, and pepper. For a smoother texture, you can pulse the cottage cheese in a blender before adding it to the eggs, but leaving it as-is provides a lovely “cheesy pocket” texture in the finished bake.
- Fold in the chopped spinach, diced peppers, and cooked protein (sausage or ham). Pour the mixture into your prepared baking dish, spreading it out evenly with a spatula. Sprinkle the shredded cheddar cheese over the top. Place the dish in the center rack of the oven and bake for 30 to 35 minutes, or until the center is set and the edges are lightly golden brown.
- Remove the dish from the oven and let it cool for at least 10 minutes. This resting period is crucial as it allows the eggs to firm up, making it much easier to slice into clean squares. Divide the bake into four equal portions for your meal prep containers. Garnish with fresh green onions if desired.
- Cook Time: 45 minutes
