High Protein Meal Prep 30g+ Easy Breakfast Dinner Cottage Cheese

  • Total Time: 40 minutes
  • Diet: Keto, Low-Carb

Ingredients

Scale
  • 2.5 cups low-fat or 2% cottage cheese
  • 8 large eggs
  • 1 cup cooked lean ground turkey or chicken sausage crumbles
  • 2 cups fresh baby spinach, chopped
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: 1/2 cup shredded light cheddar cheese for the top

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish or a standard muffin tin with non-stick cooking spray. While the oven warms up, chop your spinach, bell peppers, and green onions. If your ground turkey or sausage is not already cooked, brown it in a skillet over medium heat until fully done and drain any excess fat.
  2. In a large mixing bowl, crack the 8 eggs and whisk them vigorously until the yolks and whites are fully combined. Stir in the 2.5 cups of cottage cheese. For a smoother, custard-like texture, you can pulse the eggs and cottage cheese in a blender for 15 seconds before moving to the next step. Add the garlic powder, smoked paprika, salt, and pepper to the liquid mixture and stir well.
  3. Fold the chopped spinach, diced bell peppers, green onions, and cooked meat into the egg and cheese mixture. Ensure the vegetables and protein are evenly distributed so every serving gets an equal amount of goodness. Pour the entire mixture into your prepared baking dish or divide it evenly among the muffin tins.
  4. Place the dish in the center rack of the oven. Bake for 25 to 30 minutes, or until the center is set and the edges are lightly golden brown. If you are using shredded cheddar cheese, sprinkle it over the top during the last 5 minutes of baking. A toothpick inserted into the center should come out clean when the dish is fully cooked.
  5. Allow the bake to cool for at least 10 minutes before slicing it into four equal portions. If you are meal prepping, let the portions cool completely to room temperature before placing them into airtight containers. This prevents steam from making the crust soggy during refrigeration.
