Ingredients
Scale
- 1/2 cup rolled oats (certified gluten-free if needed)
- 1/2 cup low-fat cottage cheese
- 1/2 cup unsweetened almond milk or water
- 1 tablespoon chia seeds
- 1/2 scoop vanilla protein powder (optional for extra boost)
- 1/2 teaspoon cinnamon
- 1 teaspoon stevia or monk fruit sweetener (optional)
- 1/4 cup fresh berries for topping
Instructions
- Combine the Base: Place the rolled oats, chia seeds, cinnamon, and almond milk into a small saucepan. If you prefer overnight oats, you can skip the heat and simply mix these in a glass jar. Stir well to ensure the chia seeds do not clump together at the bottom.
- Cooking and Thickening: Turn the stove to medium heat. Simmer the oat mixture for about 3 to 5 minutes, stirring frequently. Once the oats have absorbed most of the liquid and reached a creamy consistency, remove the pan from the heat. If the mixture looks too thick, add an extra splash of almond milk.
- Incorporating the Protein: Fold in the cottage cheese and the protein powder. Stir vigorously until the cottage cheese is well incorporated. The residual heat from the oats will soften the cheese, creating a rich, creamy texture similar to rice pudding. Do not boil the mixture after adding the cottage cheese, or the cheese may become rubbery.
- Plating: Transfer the high-protein oats to a bowl. Top with fresh berries, a sprinkle of extra cinnamon, or a dollop of almond butter. Serve immediately while warm, or seal it in a container for a convenient grab-and-go meal prep option later in the week.
- Cook Time: 10 minutes
