Ingredients
Scale
- 1/2 cup rolled oats (old-fashioned)
- 1/2 cup low-fat cottage cheese
- 1/4 cup liquid egg whites
- 1/2 cup unsweetened almond milk or water
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
- Optional: Stevia, monk fruit, or maple syrup to taste
- Toppings: Fresh berries, a drizzle of almond butter, or hemp hearts
Instructions
- Step 1: Combine the Base Grab a small saucepan or a microwave-safe bowl. Add your rolled oats, almond milk, cinnamon, and vanilla extract. Stir these together until the oats are fully submerged. If you are using chia seeds, stir them in now so they have time to absorb the liquid and thicken the mixture.
- Step 2: Cook to Perfection Place the saucepan over medium heat. Stir frequently as the liquid begins to simmer. Once the oats have absorbed about half of the liquid, whisk in the liquid egg whites quickly. Continue stirring constantly for about 2 minutes. This ensures the egg whites create a fluffy texture rather than scrambling. The oats will become thick and voluminous.
- Step 3: Fold in the Protein Remove the oats from the heat. Gently fold in the cottage cheese. The residual heat will melt the cottage cheese slightly, creating a rich, creamy sauce that coats every oat. Taste the mixture and add your preferred sweetener if desired. Transfer the oats to a bowl and top with your favorite berries or a spoonful of nut butter for extra healthy fats.
