Ingredients
Scale
- 2 cups low-fat or 2% cottage cheese
- 4 large hard-boiled eggs, peeled and halved
- 1 cup cooked turkey sausage crumbles or lean ham, diced
- 2 cups fresh baby spinach, chopped
- 1 large bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons nutritional yeast (optional, for cheesy flavor)
- 1 teaspoon “Everything Bagel” seasoning
- Red pepper flakes and black pepper to taste
Instructions
- Start by washing all your fresh produce. Dice the bell peppers and halve the cherry tomatoes. If you haven’t already, hard-boil your eggs by placing them in boiling water for 9 minutes, then immediately transferring them to an ice bath. Peel and slice the eggs. Chop the baby spinach into small ribbons to ensure it mixes well with the cottage cheese base.
- If using raw turkey sausage, cook it in a non-stick skillet over medium heat until browned and fully cooked through. Drain any excess fat. In a large mixing bowl, combine the cottage cheese with the nutritional yeast, black pepper, and red pepper flakes. Stir in the chopped spinach and diced bell peppers. The moisture from the cottage cheese will slightly soften the spinach, making it more palatable for meal prep.
- Divide the cottage cheese and vegetable mixture into four airtight meal prep containers. Top each container with one sliced hard-boiled egg and a portion of the cooked turkey sausage. Garnish the tops with “Everything Bagel” seasoning and cherry tomatoes. Seal the lids tightly and store them in the refrigerator for up to four days.
- Cook Time: 25 minutes
