High Protein Tofu Breakfast 30g+ Easy Low Carb Meal Prep Cottage Cheese

  • Total Time: 25 minutes
  • Diet: Vegetarian, Low-Carb, Keto-Friendly

Ingredients

Scale
  • 7 oz Extra-firm tofu (half a standard block), pressed and drained
  • 1/2 cup Low-fat cottage cheese
  • 1 cup Fresh baby spinach, chopped
  • 1/4 cup Red bell pepper, diced
  • 1 tablespoon Nutritional yeast
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Ground turmeric (for color)
  • Salt and black pepper to taste
  • 1 teaspoon Olive oil or avocado oil
  • Optional: Fresh chives or hot sauce for garnish

Instructions

  1. Step 1: Prepare the Tofu Base: Start by removing the tofu from its packaging and draining the excess water. Use a tofu press or wrap the block in a clean kitchen towel and place a heavy plate on top for 5 minutes. Once drained, crumble the tofu into a medium-sized bowl using your hands or a fork. The crumbles should resemble the texture of scrambled eggs. Stir in the garlic powder, turmeric, and nutritional yeast until the tofu is evenly coated in the yellow spices.
  2. Step 2: Sauté the Aromatics and Vegetables: Place a non-stick skillet over medium heat and add the olive oil. Once the oil is shimmering, toss in the diced red bell peppers. Sauté for about 3 to 4 minutes until they begin to soften. Add the chopped baby spinach to the pan and cook for another minute until the leaves wilt slightly. This ensures your vegetables are tender before you add the protein base.
  3. Step 3: Combine and Cook: Add the seasoned tofu crumbles to the skillet with the vegetables. Stir everything together and cook for about 5 minutes, allowing the tofu to heat through and slightly brown on the edges. Turn the heat down to low and fold in the cottage cheese. Stir gently for 1 to 2 minutes just until the cottage cheese is warm and creates a creamy sauce around the tofu. Do not overcook at this stage, or the cottage cheese may release too much moisture. Season with salt and pepper.
  4. Step 4: Plating and Garnish: Transfer the mixture to a plate or bowl. If you are meal prepping, divide the mixture into airtight glass containers. Garnish with fresh chives, a dash of hot sauce, or a sprinkle of extra black pepper. Serve immediately while the cottage cheese is creamy and warm.
