Ingredients
Scale
- 1/2 cup low-fat cottage cheese
- 1/2 cup rolled oats (or oat flour)
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 pinch of salt
- Optional: 1/2 scoop of vanilla protein powder for extra boost
- Cooking spray or melted butter for the iron
Instructions
- Plug in your waffle iron and set it to a medium-high heat setting. While the iron warms up, place the cottage cheese, oats, egg, vanilla extract, baking powder, and salt into a high-speed blender. Blend on high for 30 to 45 seconds until the batter is completely smooth and no lumps of cottage cheese or whole oats remain. Let the batter sit for 2 minutes to allow the oats to hydrate and thicken slightly.
- Generously coat the preheated waffle iron with non-stick cooking spray. Pour the batter into the center of the iron, filling it about three-quarters of the way to prevent overflow. Close the lid and cook for 4 to 6 minutes. Avoid opening the lid too early; wait until the steam stops rising from the sides of the iron, which usually indicates the waffle is crisp and fully set.
- Carefully remove the golden-brown waffles using a silicone spatula or fork. Place them on a plate and let them cool for one minute to allow the exterior to crisp up further. Top with fresh berries, a dollop of Greek yogurt, or a drizzle of sugar-free maple syrup. Serve immediately while warm and enjoy your protein-packed feast.
