Ingredients
Scale
- 3/4 cup Non-fat or 2% Plain Greek Yogurt
- 1/2 cup Low-fat Cottage Cheese
- 1/2 teaspoon Vanilla extract
- 1–2 teaspoons Sugar-free sweetener (monk fruit or stevia)
- 1/4 cup Fresh raspberries or blackberries
- 1 tablespoon Sliced almonds or crushed walnuts
- 1 teaspoon Hemp seeds or chia seeds
- A pinch of cinnamon
Instructions
- In a medium-sized mixing bowl, add the Greek yogurt and the cottage cheese. Use a spoon to fold them together until they are well combined. If you prefer a completely smooth texture, you can quickly pulse these two ingredients in a small blender or food processor to remove the cottage cheese curds. However, many people enjoy the extra texture the curds provide.
- Add the vanilla extract, your preferred sugar-free sweetener, and a pinch of cinnamon to the yogurt mixture. Stir vigorously until the sweetener is fully dissolved and the vanilla is evenly distributed. Taste the base at this point; if you prefer it tarter, add a squeeze of lemon juice, or add more sweetener if you have a sweet tooth.
- Transfer the mixture to a serving bowl or a meal prep container. Top with fresh berries, sliced almonds, and hemp seeds. These toppings add essential healthy fats and a satisfying crunch that complements the creamy base. Serve immediately or seal the container to enjoy later in the week.
