Ingredients
Scale
- 1/2 cup Non-fat or 2% Greek Yogurt (plain)
- 1/2 cup Low-fat Cottage Cheese
- 1 scoop (approx. 15g) Vanilla Protein Powder (Whey or Casein)
- 1/4 cup Fresh Raspberries or Blackberries
- 1 tablespoon Hemp Hearts or Chia Seeds
- 1/2 teaspoon Vanilla Extract
- Optional: A few drops of liquid stevia or monk fruit sweetener
Instructions
- Step 1: Blend the Base – If you prefer a smooth, pudding-like consistency, place the cottage cheese and Greek yogurt into a small blender or food processor. Pulse for 30 seconds until the mixture is completely smooth and the cottage cheese curds disappear. If you enjoy the texture of cottage cheese, you can simply whisk them together in a bowl until well combined.
- Step 2: Incorporate Protein and Flavor – Add the protein powder, vanilla extract, and your preferred low-carb sweetener to the yogurt mixture. Use a spatula to fold the powder in gently at first so it doesn’t fly out of the bowl, then stir vigorously until the mixture is uniform and streak-free. The protein powder will thicken the base significantly, creating a mousse-like texture.
- Step 3: Assemble and Top – Transfer the mixture to a serving bowl or a portable glass jar. Top with fresh berries and hemp hearts. If you are meal prepping, place the lid on the jar and store it in the refrigerator. Wait to add the seeds and berries until right before you eat to ensure the toppings stay fresh and crunchy.
