Ingredients
Scale
- 6 large Granny Smith or Honeycrisp apples, peeled and sliced
- 1/2 cup water
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup rolled oats (old fashioned)
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup cold unsalted butter, cubed
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Step 1: Preparation. Peel, core, and slice your apples into even wedges, about half an inch thick. In the inner pot of the Instant Pot, toss the apple slices with the granulated sugar, cinnamon, nutmeg, and vanilla extract until every slice is well-coated. Pour the half-cup of water over the apples, but do not stir vigorously; let the water settle at the bottom to prevent the “burn” notice.
- Step 2: Cooking. Secure the lid on the Instant Pot and set the valve to the “Sealing” position. Select “Manual” or “Pressure Cook” on High Pressure and set the timer for 2 minutes. While the apples cook, mix the oats, flour, brown sugar, salt, and cold butter in a small bowl using a pastry cutter or your fingers until the mixture looks like coarse crumbs. Once the timer beeps, perform a Quick Release of the pressure immediately to keep the apples from getting too soft.
- Step 3: Plating. Open the lid and stir the apples gently. If you want a traditional “crisp” top, you can spread the oat mixture over the apples and place the inner pot under your oven’s broiler for 2-3 minutes until golden brown. Alternatively, you can toast the oat mixture in a skillet on the stove for 5 minutes and sprinkle it over the hot apples. Serve warm in bowls with a large scoop of vanilla ice cream or a dollop of whipped cream.
