Ingredients
Scale
- 2 cans (15 oz each) sliced peaches in heavy syrup or juice
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup salted butter, melted
- 1/2 cup whole milk
- Optional: Vanilla ice cream or whipped cream for serving
Instructions
- Open the cans of peaches and pour them directly into the inner pot of your Instant Pot. Include the syrup or juice from at least one can to ensure there is enough liquid to create steam and prevent the “Burn” notice. Spread the peaches out into an even layer at the bottom of the pot using a spatula.
- In a medium mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Stir in the milk and melted butter until a thick batter forms. Carefully drop spoonfuls of the batter over the peaches. Do not stir the batter into the peaches; keep it as a distinct layer on top to ensure it cooks into a fluffy, cake-like crust.
- Secure the lid on the Instant Pot and set the valve to the “Sealing” position. Select the Manual or Pressure Cook button and set the timer for 10 minutes on High Pressure. Once the timer beeps, allow the pressure to release naturally for 5 minutes, then perform a quick release for any remaining steam. Carefully open the lid and let the cobbler sit for 2 minutes to thicken before serving warm.
- Cook Time: 20 minutes
