Ingredients
Scale
- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch cubes
- 4 cups Broccoli florets, bite-sized
- 3 tbsp Extra virgin olive oil
- 1/2 cup Freshly grated Parmesan cheese
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Smoked paprika
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 tbsp Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat to prevent sticking. Cut your chicken breasts into uniform one-inch pieces so they cook evenly. Trim the broccoli into small florets, ensuring they are dry to help them crisp up in the oven.
- Place the chicken cubes and broccoli florets in a large mixing bowl. Drizzle the olive oil over the top. In a small ramekin, mix the garlic powder, onion powder, smoked paprika, salt, and pepper. Sprinkle the spice mix over the chicken and broccoli. Toss everything thoroughly with your hands or tongs until every piece is well-coated with oil and seasoning.
- Spread the mixture onto your prepared baking sheet in a single layer. Avoid overcrowding the pan; if the ingredients are too close, they will steam rather than roast. Place the pan in the center rack of the oven and bake for 20 minutes. At the halfway mark, use a spatula to toss the ingredients for even browning.
- Remove the pan from the oven and sprinkle the grated Parmesan cheese evenly over the chicken and broccoli. Return the pan to the oven for an additional 5 minutes, or until the cheese has melted and turned golden brown. Ensure the chicken has reached an internal temperature of 165°F. Garnish with fresh parsley before serving.
