Ingredients
Scale
- 1 box (16 oz) Angel Food Cake Mix
- 1/2 cup cold water
- 2 tablespoons fresh lemon zest
- 1/4 cup fresh lemon juice
- 1 cup lemon curd (store-bought or homemade)
- 1 cup whipped topping or stabilized whipped cream
- Powdered sugar for dusting
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats. In a large glass or metal bowl, combine the angel food cake mix with the cold water, lemon juice, and half of the lemon zest. Use a hand mixer on low speed to incorporate the ingredients, then increase to medium speed for about one minute until the batter is fluffy and aerated. Do not overmix, as you want to keep as much air in the batter as possible to maintain that “angel food” lightness.
- Use a small cookie scoop to drop rounded tablespoons of the batter onto the prepared baking sheets, spacing them at least two inches apart. These will spread slightly as they bake. Place the sheets in the oven and bake for 10 to 12 minutes, or until the edges are very lightly golden and the tops spring back when touched. Remove from the oven and let them cool completely on the pan. The cakes are delicate when warm, so patience is key here.
- While the cake bases are cooling, prepare the “pie” filling. In a medium bowl, gently fold the lemon curd into the whipped topping. Add the remaining lemon zest to the mixture for an extra punch of citrus. Fold slowly to keep the mixture light and airy. If the mixture feels too soft, place it in the refrigerator for 15 minutes to firm up before assembly.
- Once the cake cookies are entirely cool, peel them gently off the parchment paper. Take one cake and spread a generous tablespoon of the lemon filling onto the flat bottom side. Top with another cake to create a sandwich “pie.” Repeat this process for all remaining cakes. Dust the tops with a fine layer of powdered sugar and garnish with a tiny sprig of mint if desired. Serve immediately or chill until ready to eat.
