Ingredients
Scale
- 4 cups Small curd cottage cheese (Full fat or 2% recommended)
- 1/2 cup Fresh raspberries or blackberries
- 4 tablespoons Shelled hemp hearts
- 2 tablespoons Chia seeds
- 4 tablespoons Sliced almonds
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Ground cinnamon
- Liquid stevia or monk fruit drops (optional, to taste)
Instructions
- Step 1: Prepare the Protein Base. Measure out one cup of cottage cheese for each of your four meal prep containers. If you prefer a smoother, pudding-like consistency, you can pulse the cottage cheese in a blender or food processor for 30 seconds before dividing it into the bowls. This removes the “curd” texture that some people find unappealing.
- Step 2: Incorporate Flavorings. Stir in a quarter teaspoon of vanilla extract and a pinch of cinnamon into each bowl. If you prefer a sweeter breakfast, add two to three drops of your favorite liquid low-carb sweetener. Mix thoroughly so the flavor is evenly distributed throughout the creamy base.
- Step 3: Add High-Fiber Toppings. Sprinkle one tablespoon of hemp hearts and half a tablespoon of chia seeds over the top of each bowl. These seeds add essential healthy fats and fiber without significantly increasing the carb count. Finish by placing a small handful of berries and a tablespoon of sliced almonds on top for a satisfying crunch.
- Step 4: Storage and Serving. Seal the containers with airtight lids and store them in the refrigerator. When you are ready to eat, simply grab a spoon and enjoy. The chia seeds will soften slightly overnight, creating a wonderful texture similar to overnight oats.
