Make Ahead Christmas Dinner Beef Easy Budget Under $10 Feed Crowd Cost Breakdown

  • Total Time: 4 hours 20 minutes
  • Diet: Not specified

Ingredients

Scale
  • 3 lbs Beef Bottom Round or Chuck Roast
  • 5 lbs Russet Potatoes, peeled and quartered
  • 1 lb Carrots, cut into thick chunks
  • 2 large Yellow Onions, sliced
  • 4 cups Beef Broth (made from budget-friendly bouillon)
  • 3 tbsp Vegetable Oil
  • 2 tbsp Dried Rosemary and Thyme
  • 4 cloves Garlic, minced
  • Salt and Black Pepper to taste
  • 2 tbsp Cornstarch (for thickening the gravy)

Instructions

  1. Step 1: Seasoning and Searing Generously season all sides of your beef roast with salt, pepper, and dried herbs. Heat the vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Sear the beef on all sides until a deep brown crust forms, which takes about 3-4 minutes per side. This step is crucial for building the rich flavor that makes cheap cuts taste expensive. Once seared, remove the meat and set it aside on a plate.
  2. Step 2: Building the Braising Liquid In the same pot, toss in your sliced onions and minced garlic. Sauté them for about 3 minutes until they soften and pick up the brown bits from the bottom of the pan. Pour in the beef broth, scraping the bottom of the pot with a wooden spoon to release all that flavor. Place the beef back into the pot, ensuring it is at least halfway submerged in the liquid. Add the carrots around the sides of the meat.
  3. Step 3: The Low and Slow Cook Cover the pot with a tight-fitting lid and place it in an oven preheated to 300°F (150°C). Let it braise for approximately 3.5 to 4 hours. You want the beef to be “fork-tender,” meaning a fork slides in and out with almost no resistance. While the beef cooks, boil your potatoes in a separate pot of salted water until soft, then mash them with a splash of milk or water to keep costs down.
  4. Step 4: The Make-Ahead Magic Once the beef is done, remove it from the pot and let it cool completely. Place the whole roast in a container and pour the cooking liquid (with the carrots) over it. Refrigerate overnight. This step allows the fat to solidify at the top for easy removal and makes the meat much easier to slice into uniform pieces the next day.
  5. Step 5: Reheating and Serving On Christmas Day, scrape off any hardened fat from the surface. Remove the cold beef and slice it into thin, even rounds. Place the slices back into the liquid. Heat the pot on the stove over medium-low heat until the meat is warmed through. To thicken the sauce into a glossy gravy, mix cornstarch with a little cold water and stir it into the simmering liquid for 2 minutes. Serve the beef and carrots over the reheated mashed potatoes.
