- 1/2 cup Dijon Mustard ($1.00)

- 1 tsp Cinnamon and 1/2 tsp Ground Cloves ($0.20)
- 1/2 cup Butter ($1.00)
- 1/2 cup Milk ($0.30)
- Salt and Pepper to taste ($0.10)
- 1 package Dinner Rolls ($3.00)
Instructions
- Step 1: Preparation and Glaze Mix. Start by preparing your ham glaze. In a small bowl, whisk together the brown sugar, Dijon mustard, honey, cinnamon, and cloves. This mixture creates a thick, flavorful paste that will caramelize beautifully. If you are doing this a day ahead, store the glaze in an airtight container in the fridge. Wash and peel your potatoes and carrots. Cut the potatoes into uniform cubes and slice the carrots into thick rounds. Place the vegetables in a large bowl of cold water in the fridge to prevent browning if prepping the night before.
- Step 2: Cooking the Ham. Place the ham in a large slow cooker or a heavy roasting pan. If using a slow cooker, pour half a cup of water or apple juice into the bottom to keep it moist. Brush the glaze generously between the slices and all over the surface of the ham. Cover tightly with the lid or heavy-duty aluminum foil. Cook on low for 4 to 5 hours. If using an oven, set it to 325°F (165°C) and bake for about 12-15 minutes per pound until the internal temperature reaches 140°F.
- Step 3: Roasting the Vegetables. Drain your prepped potatoes and carrots and pat them dry. Toss them with melted butter, salt, and pepper. Spread them in a single layer on a large baking sheet. About 1 hour before the ham is finished, place the vegetables in the oven at 400°F (200°C). Roast until the potatoes are golden and crispy and the carrots are tender. This high heat ensures a nice texture contrast to the succulent ham.
- Step 4: Mashing and Plating. For a crowd, you can choose to serve the potatoes roasted or mash half of them for variety. If mashing, boil the cubed potatoes until soft, then whip with milk and the remaining butter. Carve the ham and arrange the slices on a large platter. Surround the meat with the roasted carrots and potatoes. Serve the dinner rolls on the side with any extra glaze drippings as a dipping sauce.
