New Year Taco Meal Prep Crockpot High Protein Under $20 Feeds 8 No Prep

  • Total Time: 4 hours 5 minutes
  • Diet: High-Protein, Low-Carb, Gluten-Free

Ingredients

Scale
  • 3 lbs Lean Ground Turkey or Chicken (93/7 blend)
  • 2 packets Low-Sodium Taco Seasoning
  • 1 jar (16 oz) Chunky Salsa (mild or medium)
  • 1 can (15 oz) Black Beans, drained and rinsed
  • 1 can (15 oz) Fire Roasted Corn, drained
  • 1/4 cup Chicken Broth or Water
  • Optional for serving: Brown rice, tortillas, Greek yogurt (as a sour cream sub), or lime wedges

Instructions

  1. Place the raw ground turkey or chicken directly into the bottom of your slow cooker. Sprinkle the two packets of taco seasoning over the meat. Pour the jar of salsa, the drained black beans, and the fire-roasted corn on top. Add the chicken broth to provide just enough moisture for the meat to cook evenly without drying out.
  2. Cover the crockpot with its lid. Set the temperature to “High” for 4 hours or “Low” for 7 to 8 hours. You do not need to stir it immediately; let the heat penetrate the meat. About halfway through the cooking time, take a sturdy wooden spoon or a meat masher and break up the ground meat into small crumbles so it incorporates with the salsa and spices.
  3. Once the timer is up, give the mixture a final vigorous stir to ensure the seasoning is distributed. If you are meal prepping, allow the mixture to cool slightly. Divide the taco meat evenly into eight meal-prep containers. If you are serving a crowd immediately, set out bowls with the taco meat alongside your favorite healthy toppings like cilantro, lime, and avocado.
