Ingredients
Scale
- 3 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups buttermilk (room temperature)
- 2 large eggs (room temperature)
- 1/2 cup unsalted butter, melted and slightly cooled
- 1 teaspoon pure vanilla extract
- Fresh berries, chocolate chips, or sliced bananas (optional toppings)
- High-quality maple syrup for serving
Instructions
- Preheat your oven to 425°F (220°C). Generously grease a 12×17 inch rimmed baking sheet with butter or non-stick cooking spray. For extra insurance against sticking, you can line the bottom with parchment paper and grease that as well. Ensure your oven rack is in the center position for even browning.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisking the dry ingredients first helps aerate the flour and ensures the leavening agents are evenly distributed, which leads to a better rise.
- In a separate medium bowl, beat the eggs lightly. Whisk in the buttermilk, melted butter, and vanilla extract until well combined. Using room temperature ingredients prevents the melted butter from seizing up and clumping when it hits the liquid.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Gently fold the ingredients together using a spatula or a large spoon. Stop mixing as soon as no large streaks of flour remain. A few small lumps are perfectly fine; overmixing will result in a tough, rubbery pancake rather than a fluffy one.
- Pour the batter onto the prepared sheet pan and spread it evenly to the edges using an offset spatula. If you are using toppings like berries or chocolate chips, sprinkle them across the top now. Bake for 15 to 18 minutes, or until the top is golden brown and the center springs back when lightly touched. Remove from the oven and let it rest for 2 minutes.
- Slice the giant pancake into squares or rectangles using a knife or a pizza cutter. Serve immediately while hot. Drizzle each portion generously with maple syrup and add a pat of butter if desired. This is the perfect time for the family to gather and enjoy their breakfast together.
