No Flip Sheet Pan Buttermilk Pancakes With Maple Syrup Family

  • Total Time: 25 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups buttermilk (room temperature)
  • 2 large eggs (room temperature)
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • Real maple syrup for serving
  • Optional: fresh berries, chocolate chips, or sliced bananas

Instructions

  1. Preheat your oven to 425°F (220°C). Generously grease an 18×13 inch rimmed baking sheet (half-sheet pan) with butter or non-stick cooking spray. For extra insurance against sticking, you can line the bottom with parchment paper, leaving a slight overhang on the sides. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate medium bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture together until just combined. Be careful not to overmix; a few small lumps in the batter are perfectly fine and help keep the pancakes fluffy. Overmixing will lead to a tough, rubbery texture.
  3. Pour the batter onto the prepared baking sheet. Use an offset spatula or the back of a spoon to spread the batter evenly to the edges and corners. If you are adding toppings like blueberries or chocolate chips, sprinkle them evenly across the top of the batter now. Gently tap the pan on the counter once or twice to release any large air bubbles.
  4. Place the pan in the center rack of the oven. Bake for 15 to 18 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. If you want a slightly crispier top, you can turn on the broiler for the last 60 seconds, but watch it closely to prevent burning.
  5. Remove the pan from the oven and let it rest for 2 to 3 minutes. This makes the pancake easier to slice. Use a knife or a pizza cutter to slice the giant pancake into 12 squares or rectangles. Serve immediately while hot with plenty of butter and warm maple syrup. Add fresh fruit on the side for a complete family meal.
