Ingredients
Scale
- 3 lbs Ground Turkey (or Turkey Breast)
- 2 cans (10 oz) Diced Tomatoes with Green Chilies
- 1 large Yellow Onion, roughly chopped (or pre-chopped frozen onion)
- 1 cup Low-Sodium Chicken Broth
- 2 packets Taco Seasoning or Chili Seasoning
- 1 tablespoon Garlic Powder
- Salt and Pepper to taste
- Optional: Fresh cilantro or lime wedges for garnish
Instructions
- Start by lightly greasing your slow cooker basin with non-stick spray or use a crockpot liner for the fastest cleanup possible. Place the raw turkey directly into the bottom of the pot. If using ground turkey, you do not even need to break it up significantly; the slow cooking process will make it easy to shred later. Add the chopped onions and pour the canned tomatoes (with their juices) directly over the meat.
- Sprinkle the seasoning packets and garlic powder over the top of the turkey and vegetables. Pour in the chicken broth to provide the necessary moisture for the “low and slow” process. Cover the crockpot with the lid. Set the temperature to “Low” for 6 to 8 hours or “High” for 3 to 4 hours. Walk away and go about your day while the flavors meld together and the turkey becomes tender.
- Once the cook time is complete, remove the lid. Use two forks to gently shred the turkey; it should fall apart effortlessly. Stir everything together so the meat absorbs the seasoned juices at the bottom of the pot. Serve the turkey in bowls, over rice, inside taco shells, or on top of a crisp salad. Garnish with fresh cilantro or a squeeze of lime for a bright finish.
- Cook Time: 6 hours 5 minutes
