Ingredients
Scale
- 2 cups Basmati or long-grain white rice
- 1 large onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons butter or olive oil
- 1 tablespoon mild curry powder
- 1/2 teaspoon ground turmeric
- 4 cups chicken or vegetable broth
- 1 cup frozen peas and carrots
- 1 teaspoon salt (adjust to taste)
- Fresh cilantro for garnish
Instructions
- Step 1: Sauté the Aromatics. Heat the butter or oil in a large pot or deep skillet over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent. Stir in the minced garlic and grated ginger. Sauté for another minute until the kitchen smells incredible, but be careful not to let the garlic burn.
- Step 2: Toast the Rice and Spices. Add the dry rice to the pot. Stir it constantly for 2 to 3 minutes to toast the grains. This step is crucial for that perfect fluffy texture. Sprinkle in the curry powder, turmeric, and salt. Continue stirring until the rice is evenly coated in the golden spices and smells toasted.
- Step 3: Simmer the Pilaf. Pour in the broth and add the frozen peas and carrots. Bring the mixture to a rolling boil. Once boiling, turn the heat down to the lowest setting and cover the pot with a tight-fitting lid. Let it simmer undisturbed for 15 to 17 minutes. Avoid the urge to peek, as the steam is what cooks the rice perfectly.
- Step 4: Steam and Fluff. Remove the pot from the heat but keep the lid on. Let it sit for 5 minutes. This resting period allows the moisture to redistribute. Remove the lid and use a fork to gently fluff the rice. Garnish with fresh cilantro and serve immediately.
