Pumpkin Brownies Fudgy Fall Desserts

Pumpkin Brownies Fudgy Fall Desserts

  • Total Time: 45 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the brownies out later. Lightly grease the parchment with cooking spray. In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
  2. Add the eggs one at a time to the sugar mixture, whisking well after each addition. Stir in the vanilla extract. Sift in the flour, cocoa powder, and salt. Fold the dry ingredients into the wet ingredients using a spatula until just combined—do not overmix. Fold in the chocolate chips. Set aside about 1/2 cup of this chocolate batter.
  3. In a separate small bowl, mix the pumpkin puree, pumpkin pie spice, and cinnamon. Take the 1/2 cup of chocolate batter you set aside and stir it into the pumpkin mixture. This helps the pumpkin layer have a similar density to the chocolate layer, ensuring even baking and better swirling.
  4. Spread the main chocolate brownie batter into the prepared baking pan, smoothing it into the corners. Drop spoonfuls of the pumpkin-chocolate mixture onto the top of the brownie batter. Use a butter knife or a skewer to gently swirl the two mixtures together, creating a marble effect. Avoid over-swirling, or the colors will blend too much.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached. Do not overbake, as they will continue to set while cooling. Remove the pan from the oven and let it cool completely in the pan on a wire rack. This is crucial for achieving that fudgy texture. Slice into 16 squares and enjoy.
