Ingredients
Scale
- 2 cups all-purpose flour
- 3 tablespoons light brown sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 ½ teaspoons pumpkin pie spice
- ½ teaspoon salt
- 3 large eggs
- 1 cup pumpkin puree (not pie filling)
- 1 ½ cups whole milk
- ½ cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (chilled)
- 2 tablespoons powdered sugar
- Pure maple syrup for serving
Instructions
- Whisk together the all-purpose flour, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt in a large mixing bowl. Ensure there are no large clumps of brown sugar left. This step distributes the leavening agents evenly so your waffles rise beautifully in the iron.
- In a separate medium bowl, beat the eggs lightly. Stir in the pumpkin puree, milk, melted butter, and vanilla extract. Whisk until the mixture is smooth and the pumpkin is fully incorporated into the liquid. Using room temperature milk helps prevent the melted butter from clumping up.
- Pour the wet ingredients into the bowl with the dry ingredients. Use a large spatula or whisk to fold them together gently. Stop mixing as soon as the flour streaks disappear. A few small lumps are perfectly fine; overmixing will result in tough, chewy waffles instead of light ones.
- Preheat your waffle iron according to the manufacturer’s instructions. Lightly coat the plates with cooking spray or a brush of melted butter if they aren’t non-stick. Once the iron is hot, pour about ½ cup to ¾ cup of batter onto the center, depending on the size of your machine. Close the lid and cook until the steam stops rising or the indicator light turns on.
- While the waffles cook, pour the chilled heavy cream and powdered sugar into a cold mixing bowl. Use a hand mixer or stand mixer to beat the cream on high speed until stiff peaks form. Be careful not to over-beat, or it will turn into butter. Set this aside in the refrigerator until you are ready to serve.
- Remove the hot waffles from the iron and place them on individual plates. Immediately top each serving with a large dollop of the fresh whipped cream. Drizzle a generous amount of warm maple syrup over the top and serve immediately while the waffles are still crisp.
