Ingredients
Scale
- 6 plain or everything bagels, sliced horizontally
- 10 large eggs
- 1/2 cup whole milk or heavy cream
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 cups shredded cheddar or Monterey Jack cheese
- 12 slices of cooked bacon or Canadian bacon
- 2 tablespoons unsalted butter, melted
- Optional: Sliced avocado, hot sauce, or fresh chives for garnish
Instructions
- Preheat your oven to 375°F (190°C). Generously grease a 9×13 inch rimmed baking sheet with butter or non-stick spray, or line it with parchment paper for easy removal. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until the mixture is uniform and slightly frothy. Pour the egg mixture into the prepared baking sheet. Bake for 12 to 15 minutes, or until the eggs are just set and no longer liquid in the center.
- While the eggs bake, place the bottom halves of your bagels on a separate large baking sheet. Once the eggs are done, remove them from the oven. Carefully slide the sheet of eggs onto a cutting board and cut them into squares or circles that match the size of your bagels. Place one egg portion onto each bagel bottom. Layer the cooked bacon and a generous sprinkle of cheese over the eggs. Place the top half of the bagel on each sandwich.
- Brush the tops of the bagels with the melted butter. This helps them achieve a beautiful golden-brown color and a slight crunch. Place the baking sheet back into the oven for 5 to 7 minutes, or until the cheese has melted completely and the bagels are toasted. Remove from the oven, garnish with fresh chives or avocado if desired, and serve immediately while the cheese is gooey and hot.
- Cook Time: 35 minutes
