Sheet Pan Breakfast Sandwiches Easy Brunch Feed A Crowd

  • Total Time: 40 minutes
  • Diet: Standard

Ingredients

Scale
  • 12 slider rolls or brioche buns (connected in a pack)
  • 10 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 12 slices of sharp cheddar cheese
  • 12 slices of deli ham or cooked bacon strips
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon chopped fresh chives (optional)
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 9×13-inch rimmed baking sheet with non-stick spray or line it with parchment paper. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until the mixture is uniform and slightly frothy. Pour the egg mixture into the prepared baking sheet, ensuring it spreads evenly to all corners.
  2. Place the egg sheet in the oven and bake for about 12 to 15 minutes, or until the eggs are just set and no longer liquid in the center. While the eggs bake, slice your entire block of slider rolls in half horizontally, creating one large top slab and one large bottom slab. Place the bottom slab on a separate large baking sheet.
  3. Once the eggs are done, remove them from the oven. Let them cool for two minutes, then flip the entire egg sheet onto the bottom layer of the buns. Layer the ham or bacon over the eggs, followed by the slices of cheese. Place the top slab of buns over the cheese. Brush the tops of the buns with melted butter and sprinkle with chives. Return the entire pan to the oven for 8 to 10 minutes until the cheese is bubbly and the bread is golden brown. Slice into individual sandwiches and serve immediately.
