Sheet Pan Cinnamon Roll Pancakes With Cream Cheese Glaze Easy

Sheet Pan Cinnamon Roll Pancakes With Cream Cheese Glaze Easy

  • Total Time: 35 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • For the Pancake Batter:
  • 2 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 cups whole milk
  • 2 large eggs
  • ¼ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • For the Cinnamon Swirl:
  • ½ cup unsalted butter, melted
  • ½ cup light brown sugar, packed
  • 1 tablespoon ground cinnamon
  • For the Cream Cheese Glaze:
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Generously grease a 13×18-inch rimmed baking sheet (half-sheet pan) with butter or non-stick cooking spray. For extra security, you can line the bottom with parchment paper, leaving a little overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate medium bowl, combine the milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it is perfectly fine if there are a few small lumps. Overmixing will result in tough pancakes.
  3. In a small bowl, mix the melted butter, brown sugar, and cinnamon until smooth. Pour the pancake batter onto the prepared baking sheet and spread it evenly into the corners using a spatula. Transfer the cinnamon mixture into a small plastic ziptop bag. Snip a tiny corner off the bag and pipe the mixture in swirls or zig-zags across the top of the pancake batter.
  4. Place the baking sheet in the center rack of the oven. Bake for 15 to 20 minutes, or until the pancake is puffed and the edges are lightly golden brown. You can test for doneness by inserting a toothpick into the center; it should come out clean or with just a few dry crumbs.
  5. While the pancake bakes, whisk the softened cream cheese, powdered sugar, milk, and vanilla in a bowl until smooth. Once the pancake comes out of the oven, let it cool for 5 minutes. Drizzle the cream cheese glaze generously over the warm pancake. Slice into squares and serve immediately.
