Sheet Pan Pancakes With Bacon Family Feeds 8 No Flip

  • Total Time: 30 minutes
  • Diet: Standard

Ingredients

Scale
  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 2 1/2 cups whole milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 8 to 10 slices of bacon (thin-cut works best)
  • Maple syrup for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Generously grease a 12×17 inch rimmed baking sheet (half-sheet pan) with butter or non-stick cooking spray. For even easier removal, line the bottom with parchment paper and grease the paper as well. Set the pan aside while you prepare the batter.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt. Ensure there are no large clumps of flour. Creating a well in the center of the dry ingredients will help you incorporate the wet ingredients more smoothly in the next step.
  3. In a separate medium bowl, whisk the milk, eggs, melted butter, and vanilla extract until well combined. Pour the wet mixture into the well of the dry ingredients. Use a spatula to gently fold the ingredients together until just combined. Be careful not to overmix; a few small lumps are perfectly fine and actually lead to a fluffier pancake.
  4. Pour the batter onto the prepared baking sheet. Use an offset spatula or the back of a spoon to spread the batter evenly to the corners. Lay the bacon strips across the top of the batter. You can lay them in rows or chop them into pieces and sprinkle them evenly for bacon in every bite.
  5. Place the baking sheet on the center rack of the oven. Bake for 15 to 20 minutes, or until the pancake has risen and the top is golden brown. You can check for doneness by inserting a toothpick into the center; it should come out clean. If you prefer extra crispy bacon, you can turn on the broiler for the last 60 seconds of cooking.
  6. Remove the pan from the oven and let it cool for about 2 to 3 minutes. This makes it easier to cut. Use a pizza cutter or a sharp knife to slice the sheet into 8 large squares (or 16 smaller ones for kids). Serve warm with a generous drizzle of maple syrup and extra butter if desired.
