Sheet Pan Pumpkin Breakfast Burritos With Sausage Fall Meal Prep

Sheet Pan Pumpkin Breakfast Burritos With Sausage Fall Meal Prep

  • Total Time: 50 minutes
  • Diet: High-Protein

Ingredients

Scale
  • 1 lb ground breakfast sausage (pork or turkey)
  • 10 large eggs
  • 1/2 cup pure pumpkin puree (not pumpkin pie filling)
  • 1 large red bell pepper, diced
  • 1 small yellow onion, diced
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • 8 large flour tortillas (burrito size)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Step 1: Prep the Oven and Vegetables Preheat your oven to 400°F (200°C). Line a large, rimmed sheet pan with parchment paper or spray it generously with non-stick cooking spray. Toss the diced bell peppers and onions onto one half of the sheet pan. Drizzle with a tiny bit of oil and sprinkle with half of the salt and pepper.
  2. Step 2: Roast the Sausage and Veggies Crumble the raw breakfast sausage into small chunks and spread it across the other half of the sheet pan. Place the pan in the oven and bake for 15 minutes. This allows the sausage to brown and the vegetables to soften and caramelize slightly before you add the egg mixture.
  3. Step 3: Whisk the Pumpkin Egg Mixture While the sausage and veggies are roasting, crack the 10 eggs into a large mixing bowl. Add the pumpkin puree, smoked paprika, garlic powder, and the remaining salt and pepper. Whisk vigorously until the pumpkin is fully incorporated and the mixture is smooth and pale orange.
  4. Step 4: Bake the Eggs Remove the sheet pan from the oven. Carefully pour the egg mixture over the entire pan, letting it fill the gaps between the sausage and vegetables. Sprinkle the shredded cheddar cheese evenly over the top. Return the pan to the oven and bake for another 10-12 minutes, or until the eggs are set and no longer jiggly in the center.
  5. Step 5: Assemble the Burritos Let the sheet pan cool for 5 minutes. Use a spatula to slice the egg and sausage bake into 8 equal rectangular portions. Place one portion in the center of each flour tortilla. Fold in the sides and roll tightly. If eating immediately, serve warm. For meal prep, let them cool completely before wrapping.
