  • Total Time: 25 minutes
  • Diet: Standard

Ingredients

Scale
  • 1 lb Ground Beef (80/20 blend for best flavor)
  • 16–20 Round Dumpling or Gyoza Wrappers
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 4 slices American Cheese (cut into quarters)
  • 2 tbsp Vegetable Oil
  • 1/4 cup Dill Pickle slices
  • 2 tbsp Shredded Iceberg Lettuce
  • For the Burger Sauce: 1/4 cup Mayonnaise, 1 tbsp Ketchup, 1 tsp Yellow Mustard, 1 tsp Pickle Juice

Instructions

  1. Start by portioning your ground beef into small, uniform balls about the size of a walnut (roughly 1 ounce each). Season the beef balls generously with salt, pepper, and garlic powder. Lay your dumpling wrappers out on a clean work surface or a parchment-lined baking sheet. In a small bowl, whisk together the mayonnaise, ketchup, mustard, and pickle juice to create your signature burger sauce and set it aside.
  2. Place one beef ball in the center of each dumpling wrapper. Use a small piece of parchment paper and a heavy spatula (or the bottom of a flat glass) to press the beef down firmly until it covers almost the entire surface of the wrapper. You want the meat to be very thin so it cooks quickly and develops a beautiful crust. Repeat this process for all the wrappers until your “burgers” are ready to hit the pan.
  3. Heat a large non-stick skillet or cast-iron griddle over medium-high heat and add the vegetable oil. Once the oil is shimmering, place the dumplings meat-side down into the hot pan. Cook for about 2 to 3 minutes without moving them to ensure a deep brown, crispy sear. Flip the dumplings over so the wrapper side is now touching the pan. Immediately place a quarter-slice of American cheese on the meat side of each dumpling.
  4. Cover the skillet with a lid for 30 to 60 seconds to help the cheese melt and to allow the dumpling wrapper to become golden and crispy on the bottom. Once the cheese is gooey and the wrapper is toasted, remove the dumplings from the pan. Place them on a platter and top each one with a dollop of burger sauce, a pinch of shredded lettuce, and a pickle slice. Serve immediately while they are hot and crunchy.
