Ingredients
Scale
- 1 lb Lean ground beef (80/20 mix works best for flavor)
- 4 Medium flour tortillas (fajita or soft taco size)
- 4 Slices American or Cheddar cheese
- 1 cup Shredded iceberg lettuce
- 1/4 cup Dill pickle slices
- 1/2 Small white onion, finely diced
- Salt and black pepper to taste
- For the Special Sauce:
- 1/2 cup Mayonnaise
- 1 tbsp Yellow mustard
- 1 tbsp Sweet pickle relish
- 1/2 tsp Garlic powder
- 1/2 tsp Paprika
Instructions
- In a small bowl, whisk together the mayonnaise, mustard, relish, garlic powder, and paprika to make your secret burger sauce. Set this aside in the refrigerator. Take your ground beef and divide it into four equal portions, roughly 4 ounces each. Roll them into loose balls. Do not overwork the meat, as this can make the burgers tough. Season the exterior of the beef balls generously with salt and black pepper.
- Heat a large non-stick skillet or cast-iron griddle over medium-high heat. Place one beef ball in the center of the pan. Immediately place a flour tortilla directly on top of the beef. Using a heavy spatula or a burger press, press down firmly on the tortilla until the beef is smashed into a very thin layer that covers most of the tortilla’s surface. Hold the pressure for about 10 seconds to ensure a good sear.
- Cook the beef for about 2 to 3 minutes until a deep brown crust forms. Carefully slide your spatula under the beef and flip the entire thing over so the tortilla is now touching the pan. Immediately place a slice of cheese on the hot beef. Cook for another 1 to 2 minutes. This toasts the tortilla until it is crispy while melting the cheese. Remove the wrap from the pan and place it on a clean plate.
- Spread a tablespoon of the special sauce over the melted cheese. Top with shredded lettuce, diced onions, and pickle slices. Fold the tortilla in half like a taco or fold in the sides to create a wrap. Serve immediately while the tortilla is still crunchy and the beef is hot.
- Cook Time: 20 minutes
