Ingredients
Scale
- 2 large English cucumbers (hothouse cucumbers)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce or coconut aminos (for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon chili crisp or red pepper flakes (adjust to heat preference)
- 1 teaspoon maple syrup or monk fruit sweetener
- 1 tablespoon toasted sesame seeds
- Optional: Sliced green onions for garnish
Instructions
- Wash and dry your English cucumbers thoroughly. Place them on a sturdy cutting board. Use the side of a heavy chef’s knife or a rolling pin to firmly press down on the cucumbers until they split open and crack along their length. This “smashing” technique creates more surface area for the sauce to cling to and softens the interior of the cucumber.
- Once smashed, slice the cucumbers into bite-sized pieces or long, thin “noodle” strips. If you prefer a more traditional noodle shape, you can use a vegetable peeler or julienne slicer after the smashing process, though the rustic chunks are the classic viral style. Place the pieces into a large mixing bowl or a large airtight container with a lid.
- In a small bowl, whisk together the minced garlic, soy sauce, rice vinegar, sesame oil, chili crisp, and your choice of sweetener. Stir until the sweetener is fully dissolved. Taste the dressing and adjust the salt or heat to your liking.
- Pour the dressing over the smashed cucumbers. If you are using a container with a lid, close it tightly and shake vigorously—this is the signature TikTok move that ensures every crevice is coated. If using a bowl, toss the mixture well with tongs. Transfer to a serving plate and garnish with toasted sesame seeds and sliced green onions.
- Cook Time: 15 minutes
