Smashed Sweet Potatoes Crispy With Chipotle Mayo Fall Viral Air Fryer Extra

  • Total Time: 45 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1 lb small to medium Sweet Potatoes (uniform in size)
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Smoked Paprika
  • Salt and Black Pepper to taste
  • 1/2 cup Mayonnaise
  • 1 tablespoon Chipotle Peppers in Adobo Sauce (finely minced)
  • 1 teaspoon Lime Juice
  • 1/2 teaspoon Honey or Maple Syrup
  • Fresh Cilantro or Chives for garnish

Instructions

  1. Start by washing the sweet potatoes thoroughly to remove any dirt. Place the whole, unpeeled potatoes in a large pot of salted water and bring to a boil. Cook for 15 to 20 minutes, or until they are fork-tender but not falling apart. Alternatively, you can prick them with a fork and microwave them for 5-7 minutes. Once softened, drain the water and let them cool for a few minutes so you can handle them comfortably.
  2. Place the softened sweet potatoes on a flat surface or directly on a piece of parchment paper. Use the bottom of a heavy glass or a potato masher to gently press down on each potato until it is about 1/2 inch thick. In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, salt, and pepper. Use a pastry brush to coat both sides of each smashed potato with the seasoned oil mixture.
  3. Preheat your air fryer to 400°F (200°C). Arrange the smashed sweet potatoes in a single layer in the air fryer basket, making sure they do not overlap. You may need to work in batches depending on the size of your air fryer. Air fry for 15 to 18 minutes, flipping halfway through, until the edges are dark golden brown and very crispy. The natural sugars will caramelize, so keep an eye on them during the last few minutes to prevent burning.
  4. While the potatoes are getting crispy, prepare the dipping sauce. In a small bowl, combine the mayonnaise, minced chipotle peppers, lime juice, and honey. Whisk until smooth and creamy. Taste and adjust the heat by adding more chipotle if desired. Once the potatoes are done, remove them from the air fryer and serve them hot on a platter. Garnish with fresh cilantro or chives and serve the chipotle mayo on the side for dipping.
