Thanksgiving To New Year Crockpot Plan

Thanksgiving To New Year Crockpot Plan

  • Total Time: 8 hours 20 minutes
  • Diet: Gluten-Free, Low-Sodium

Ingredients

Scale
  • 4–5 lb Turkey Breast or Beef Chuck Roast (depending on the holiday)
  • 1 lb Red potatoes, halved
  • 4 Large carrots, peeled and chopped
  • 1 Large yellow onion, quartered
  • 3 Cloves garlic, minced
  • 2 cups Low-sodium chicken or beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 2 Bay leaves
  • Salt and black pepper to taste
  • 2 tablespoons Cornstarch (optional, for gravy)

Instructions

  1. Step 1: Season and Sear Start by patting your meat dry with paper towels. Generously season all sides with salt and black pepper. Heat a large skillet over medium-high heat with a splash of oil. Sear the meat for 3-4 minutes per side until a golden-brown crust forms. This step is crucial for locking in deep, caramelized flavors that the slow cooker alone cannot achieve.
  2. Step 2: Layer the Aromatics Place the onions, garlic, carrots, and potatoes at the bottom of the crockpot. These vegetables act as a natural rack for the meat, preventing it from sitting directly on the heating element and ensuring even cooking. Sprinkle half of the fresh herbs over the vegetables.
  3. Step 3: Assemble and Liquid Addition Place the seared meat on top of the vegetable layer. Pour the broth and Worcestershire sauce around the sides of the meat (don’t pour it directly over the top to avoid washing off the seasoning). Add the bay leaves and the remaining rosemary and thyme.
  4. Step 4: Slow Cooking Cover the crockpot with a tight-fitting lid. Set the temperature to LOW and cook for 8 hours. Resist the urge to lift the lid during the process, as each peek releases heat and adds significant time to the cooking cycle. The meat should be fork-tender at the end of the duration.
  5. Step 5: Finishing and Gravy Remove the meat and vegetables to a serving platter and tent with foil to keep warm. Strain the remaining liquid into a small saucepan. Whisk cornstarch with a little cold water to create a slurry, then stir it into the liquid over medium heat until thickened. Pour this rich gravy over the dish before serving.
