Ingredients
Scale
- 2 cups frozen pineapple chunks
- 1/2 cup frozen banana slices
- 1/3 cup full-fat canned coconut milk (chilled)
- 1 tablespoon agave nectar or honey (optional)
- 1/4 cup crunchy granola
- 1 tablespoon shredded unsweetened coconut
- Fresh kiwi slices
- Fresh dragon fruit or strawberries for color
- Hemp seeds or chia seeds for garnish
Instructions
- Gather all your ingredients and ensure your fruit is completely frozen. Using frozen fruit instead of ice is the secret to achieving that signature thick, spoonable consistency. Chill your blender jar in the freezer for five minutes if you want to prevent the smoothie from melting too quickly during the process. Slice your fresh fruit garnishes now so they are ready to go as soon as the base is blended.
- Place the frozen pineapple, frozen banana, coconut milk, and sweetener into a high-powered blender. Start on the lowest speed and use a tamper to push the frozen fruit down into the blades. Gradually increase the speed, but do not over-blend. You want a thick, creamy texture that holds its shape. If the mixture is too dry, add one tablespoon of coconut milk at a time until it moves, but keep it as thick as possible.
- Scoop the thick smoothie base into a chilled bowl. Use the back of a spoon to smooth the surface or create a decorative swirl. Arrange your granola in a neat line down one side. Place the sliced kiwi and dragon fruit next to the granola to create a rainbow effect. Sprinkle the shredded coconut and seeds over the top. Serve immediately before it begins to melt.
